Like iTunes, but don’t have an iPod? Now you can use just about any MP3 with iTunes with this app (Win) called iTunes agent – [via] Link.
Pictured here, my non-iPod, the PEZMP3 player – Link.

Is it possible to do a similar thing on the Mac?

Yes, there’s a similar .app for the mac for free that does exactly this. It’s called SyncTunes (Link: http://www.nesfield.co.uk/synctunes/index.html ). I’ve been using it for some time on an old 128mb MP3 player that I use at the Gym. It will even sync your playlists over (if the player understands playlist files). Hope this helps.
