Royal Hawaiian Mai Tai

This afternoon I was organizing my vacation photos from last year, and when I came across this one, I stopped sorting and started drooling. This is the Royal Hawaiian Mai Tai– the quintessential tropical cocktail. This one was served to me by Cui, a bartender at the Mai Tai Bar, Waikiki’s most spectacular beach front bar. I just found the recipe at HawaiiMagazine.com and after I realised I had the dark rum, amaretto, cointreau, and orange juice, I texted my husband to bring home the rest of the ingredients. I’m going to spend tonight in, pretending I’m back on the beach. I wonder if I can craft something up to serve as a paper umbrella?
