Everyone should own a slow cooker, seriously, especially if you are a lazy cook, like me. Simply prepare your ingredients, throw them in the pot (don’t forget to turn the machine on), and a few hours later your kitchen smells amazing and you’re ready to eat.

I am already drooling over this enchilada bake recipe from Cooking Classy. This meal is actually meatless, but still packed full of protein thanks to all the beans and quinoa!
