As I prepare for my first big outdoor adventure this coming weekend to Algonquin Park here in Ontario, I have been given the task of meal planning for our ultra light trip. We will be paddling in to our campsite on kayaks. which means heavy cans or bulky fresh produce will not make the cut. I have been scouring the internet and library for recipes that will pack the most nutritional and caloric value into the smallest packages. I came across Morgan’s blog, Beauty in the Backcountry while looking for a homemade energy bar recipe. She’s even gone ahead and modified her recipe into three different flavors to give your taste buds some variety.
Even her date energy balls look like a great trail snack (though they are more susceptible to getting smushed in your pack). Both of these recipes are also gluten free, so no worries for all you adventure seeking celiacs out there.
