I’ve had an interesting problem recently where my stove cooktop is broken, so I’ve had to get creative with oven and microwave dishes. In the course of my research online, I came across two great recipes for baked eggs. It’s a very forgiving dish, so you can use pretty much whatever you’ve got in the fridge, including leftovers. I used diced red onions, mushrooms, a little salsa (for lack of fresh tomatoes), and cheddar cheese. I used the generalized techniques from the recipes on Cookography and Tastes Like Home.
