Make: Live brewing friends Douglas Amport and John LaPolla have finally opened their brew supply and brew-on-premisis shop in New York City, called Bitter and Esters (formerly City Brewshop). They’re still installing equipment but are open weekends from noon-7pm and are holding brewing classes starting July 10. John and Douglas helped me pick out ingredients for a wheaty ale. I tasted different grains and we picked out yeast and hops that would balance together well. Some computer software aided in calculating every possible thing about the beer, like color, alcohol content, and bitterness. It’s currently fermenting in my pantry.
