Recipe: Satay-Spiced Peanut Butter Sandwich

Food & Beverage

In the Kitchen

By Jessica Wilson
I’m a big fan of grilled peanut butter sandwiches and it has nothing to do with Elvis Presley (no bananas for me). I’m also a big fan of Thai food, especially the gingery, peanut-buttery goodness that is called satay. One night, while foraging around the fridge for some dinner fixins, I thought I would make a grilled peanut butter sandwich when I spied some bean sprouts and cilantro, and an idea was formed. Trust me, this is good stuff. Makes 2 sandwiches.

4 slices of bread
1/2 cup natural peanut butter
2 teaspoons soy sauce
2 teaspoons brown sugar
Lime juice
A fresh lime is best, but store-bought lime juice will do in a pinch.
Fresh cilantro stems removed
Sliced red onion
Handful of bean sprouts
1 tablespoon fresh grated ginger root
Butter or margarine

Satay Spiced Pb Sandwich Step1
Step 1: Assemble the ingredients and pop a skillet onto your stove top.

Step 2: Measure 2 teaspoons of soy sauce into a small cup or bowl. Add about 2 teaspoons of lime juice. Set aside.

Step 3: Scoop 1/2 cup of natural peanut butter into a bowl and stir until smooth. Add soy sauce and lime juice to the peanut butter. Grate about 1 tablespoon of fresh ginger root to the mix and stir it up. The peanut butter will get clumpy and form a ball. Don’t worry about that — it’s just the acid from the lime juice denaturing the protein in the peanut butter (makes for a cool science experiment!). Pop the mixture into the microwave for about 20 seconds to soften.

Step 4: Spread half of the peanut butter mixture onto one slice of bread and the other half onto another. Add sliced red onion.

Step 5: Next, add your cilantro leaves and top it all off with your bean sprouts.

Step 6: Top your sandwich with the remaining bread slices, and spread a small amount of butter or margarine (or vegan spread) on top.

Step 7: Add a small pat of butter to your skillet and turn the flame on to medium low. Allow the butter to melt and place the sandwich on top of the melted butter, butter side up. Cook until browned, about 4 minutes, then flip it over and cook the other side for 4 minutes.

Step 8: Cut the sandwich in half, arrange it on a happy plate, and enjoy with a Thai iced tea, fizzy lime drink, or beverage of your choice. Happy grilling!

Looks awesome but ya gotta swirl some Sriracha in that!

I think it needs protein and more veggies. It’s mostly carbs and fat right now.
But I like the idea. I have a jar of homemade satay that’s been sitting in my fridge for awhile and needs to go. I’ll prob marinate and grill some tofu and add spinach and peppers.

hey, peanut butter has protein! :)
ooh, tofu sounds good and you could add basil to it as well or maybe a basil cucumber salad on the side.

Oh. WOW. This came right on time for dinner. I sort-of improvised with stuff (didn’t have lime or lemon, but added some apple vinegar for the tanginess), The sauce came out very yummy (licked the bowl clean with my finger),

Now grilling some chicken breast, because after one bite I knew this sandwich needed that.
