CRAFT Recipe: Spinach and Yogurt Borani

I was bemoaning my hatred of spinach to fellow Craftzine blogger Goli Mohammadi the other day, and she revealed one of the secrets of the universe, a really tasty spinach recipe her mom makes! It couldn’t be easier and you get loads of important nutrients. I called it “spinach yum” until Goli informed me that it’s a middle eastern salad recipe called Borani. Here’s a similar Borani recipe you can try as an alternative.
Ingredients
2 c fresh loose leaf spinach
2 cloves garlic
1/2 c plain yogurt
2 T olive Oil
These amounts are approximate; this made a delicious dish for one, but feel free to use more or less depending on the number of people you’re feeding or how hungry you are. (Remember that the spinach will cook down quite a bit!)
Chop the garlic cloves and saute them quickly in a frying pan over medium heat until they’re translucent (but not brown). Rinse off the spinach, and then toss it in the pan while still wet. Cook until wilted, just a minute or two. Transfer to a bowl or plate and add unflavored yogurt to taste. Delicious! I licked the plate.
