    the beauty of the recipe is that it you get the wonderfully sweet yeasty flavor without the work of a traditional yeasted bread (no kneading, no rising). you can also really play with the flavor by experimenting with different beers. a dark amber will give you good color and a deeper caramel-y flavor. a very light ale will give you a bright sweet flavor. and of course you should experiment with things to mix in… cheddar and green onions, smoked gouda, rosemary and chopped black olives… etc.
