This year marks my first vegetarian Thanksgiving since high school, and we bought a fantastic dinner in advance from a local restaurant specializing in organic and veggie-friendly meals. The main dish was a veggie loaf that contained all kind of delicious roasted vegetables, plus nuts, lentils and who knows what else. I’m totally inspired to create my own customized version using the Magical Loaf Studio from the popular Vegan Lunchbox blog. Just choose from a variety of ingredients in a few different categories (Protein, Carbohydrate, Nuts/Seeds, Veggies, Liquid, Herbs), click “submit” and you’ve got a fun new recipe to try.
