I’ve been on a cooking kick lately, and one of the blogs that’s keeping me most inspired is Budget Bytes by Beth M. I’ve bookmarked tons of her recipes, and the ones I’ve already tried have all been really tasty. A new favorite is her chicken ‘n apple salad. Last week, Kristin from Craft Leftovers and Diane of Crafty Pod visited me at my home here in Houston. I whipped up a batch of this salad so we could have something quick and fresh to eat for lunch so we could maximize our crafty and adventure time. We served it in wraps, and it was so incredibly easy and delicious. The texture of the apples and chicken and dried cranberries is really interesting, and the dressing is wonderfully tangy. I was already craving it again this week, so I made another batch to keep in the fridge and keep me from falling into the “I don’t want to make anything for lunch, so I’ll just eat all my kids’ Halloween candy” trap. This recipe will be in regular rotation in our house for sure.
