Red wine vinegar is really easy to make at home. All you need is some leftover red wine, some water, red wine vinegar mother, and a few tools. You can look for red wine vinegar at your local homebrewing shop, but mine was out, so I ordered it online. It’s basically “live” red wine vinegar which contains the bacteria Acetobacter, which eats alcohol and turns it into acetic acid, the tangy flavor we know as vinegar. Mikey and Wendy created a wonderfully concise wine-making video: Just what I needed to get over the “there’s too many interesting things to read about this project and complications to explore before ever getting started” barrier. $3 gallons of wine, here I come! Skeptical about the quality? Check out the first recipe on this page. […]
Yeast under a microscope, via Wikipedia Chelsea Green has 2 great posts with Sandor Katz, author of “The Revolution Will Not Be Microwaved: Inside America’s Underground Food Movements” and “Wild Fermentation: The Flavor, Nutrition, and Craft of Live-Culture Foods,” on the wonderful world of fermentation. First, here’s license to experiment (if you needed it): More […]
