The A Little Yumminess blog has a mouthwatering recipe for Coconut Mango Pancakes. That actually sounds like a whole lot of yumminess to me! Simran, the author, suggests serving them with honey or syrup, or alternately as dessert with ice cream and fresh chopped mangoes. Think I might have to have pancakes for dinner!
