Trees for the Forest has a really nice, simple recipe for the Irish dish colcannon. It’s mashed potatoes and kale, mixed together. Yum! I found out about it because they eat it in the film “In America,” which is the story of an Irish immigrant family living in New York City.
Many pudding recipes contain multiple egg yolks, which give vanilla pudding a yellow tint. In this recipe, I’ve opted to use fewer egg yolks than a typical recipe so that it’s easy to tint with food coloring, for a fun St. Patrick’s Day rainbow dessert for kids.
We’re feeling lucky as we craft these rainbow painted pots for St. Patrick’s Day. They are sure to be filled with gold at the end of this rainbow.
